Because it tastes nicer. People will come to a restaurant to buy a product which satisfies them the most. As many people like sugar, they will buy drinks with higher sugar content (normally). However, another main reason is that there will be a mild addiction to the sugar afterwards, which will have an effect of the customer purchasing more drinks to satisfy their addiction.
The more sugar a drink has the more tasty it can be, and people like to feel like they are getting their moneys worth when being served an item at a restaurant. I used to work at McDonalds and even though the gas station sold soda cheaper across the street, people still came in our drive thru to buy our fountain drinks because they were more flavorful.
